German Recipe Apple Dessert Pancake

German Recipe Apple Dessert Pancake Ingredients:
  • 1/4 cup plus 2 teaspoons Sugar
  • 1/2 teaspoon Cinnamon
  • 1 cup All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1½ cups Whole Milk
  • 4 Large Eggs
  • 1½ lb Gala Apples
  • 2 tablespoons Fresh Lemon Juice
  • 6 tablespoons Unsalted Butter - cut into 12 pieces

German Recipe Apple Dessert Pancake Instructions:
  • Preheat oven to 200°F.
  • Combine 1/4 cup sugar and cinnamon together and put to one side.
  • Whisk flour, salt and 2 teaspoons sugar together in a large bowl. Add milk slowly whilst whisking then add the eggs one at a time, whisking well between each addition.
  • Peel apples then cut into 1/8-inch thick slices around core, discarding the core. Cut apple slices into 1/8-inch-thick matchsticks and toss in a bowl with lemon juice. Fold apples and juice into batter.
  • Heat 1/2 tablespoon of butter over moderate heat in a 6-inch non-stick skillet until foam subsides.
  • Add 1/3 cup batter, spreading evenly to cover bottom. Cook for approximately 4 minutes, reduce heat if browning too quickly and turn pancake over once with a thin flexible heatproof spatula until pancake appears golden on both sides.
  • Slide pancake onto a platter and keep warm in the oven.
  • Use the remaining butter and batter to make more pancakes.
  • Sprinkle with cinnamon and sugar then serve immediately.
