Apple Blueberry Pie Recipe Ingredients:- Pastry for 9" Double Crust Pie
- 3/4 cup Sugar
- 1 tablespoon Tapioca - quick cooking
- 1 teaspoon Cinnamon
- 1/4 teaspoon Nutmeg
- 1 pint Blueberries
- 4 Granny Smith Apples - peeled, sliced
- 2 teaspoons Lemon Juice
- 1/2 Lemon - grated peel
- 2 tablespoons Butter cut into slices

Apple Blueberry Pie Recipe Instructions:- Preheat oven to 375° F.
- Roll out pastry for two 9" pie crust on a lightly floured surface to 11" then transfer to 9" pie plate.
- Place cut up apples and washed blueberries in a large bowl then sprinkle with lemon juice and toss gently.
- Combine sugar, tapioca, nutmeg and cinnamon together in a small bowl then sprinkle over fruit and toss gently. Grate lemon over the fruit and allow to stand for 15 minutes.
- Take the filling and spoon into prepared pie crust then dot with butter.
- Top with pie crust then make a slit in the top to allow the steam to escape then seal the edges. Cut away excess pastry then cover the edges of the crust with strips of foil to prevent over-browning.
- Place in oven and bake for 25 minutes.
- Remove strips of foil then continue baking for 20-25 minutes or until the crust appears golden and the filling is bubbling.
- Place on a wire rack and allow to cool.
