Apricot Pie Recipe

Apricot Pie Recipe Ingredients:
  • 2 cups Dried Apricots
  • 2 cups Water
  • 1/2 cup Sugar
  • 1½ tablespoons Cornstarch
  • 1/4 teaspoon Salt
  • 3 tablespoons Butter
  • Pastry for 2-Crust, 9-inch Pie

Apricot Pie Recipe Instructions:
  • Preheat oven to 425 F.
  • Combine apricots and water together in a saucepan and bring to a boil. Cook for 10 minutes then add sugar and continue to cook for 5 minutes.
  • Drain off the juice, reserving 1 cup then put the apricots to one side.
  • Pour the reserved apricot juice into a saucepan then add the cornstarch and salt. Cook, stirring regularly until the mixture thickens.
  • Place the drained apricots in an unbaked pie shell then pour in the thickened apricot juice. Dot with butter and cover with top crust. Create a slit in the top then flute the edges.
  • Place in the oven and bake for 30 minutes or until browned.

  • Baking time is 30 minutes or until browned.
  • Allow to cool a little before serving.
Apricot Pie Recipe Serving Instructions:
  • Serve with Whipped Cream, Ice Cream or Custard.
