Fresh Apricot Recipe Ingredients:- 1 cup Flour
- 1 tablespoon Baking Powder
- 1/8 teaspoon Salt
- 1/2 cup Butter - softened
- 3/4 cup Sugar
- 2 Eggs
- 1/4 teaspoon Almond Extract
- 4 Fresh Apricots - thinly sliced
- 1 tablespoon Sugar

Fresh Apricot Recipe Instructions:- Preheat oven to 350°.
- Grease a 9 inch round cake pan.
- In a medium bowl, combine together flour, baking powder and salt then put to one side.
- In a large bowl, beat butter and 3/4 cup sugar until light and fluffy using an electric mixer on medium speed.
- One at a time, add the eggs beating well after each one has been added then blend in extract. Add the flour mixture and continue to beat until just blended.
- Spread into the prepared pan then cover with the apricot slices. Sprinkle with 1 tablespoon of sugar.
- Place in the oven and bake for 40 to 45 minutes or until a toothpick inserted in the middle comes out clean.
- Allow to cool completely.
