Apricot Jam Jelly Recipe

Apricot Jam Jelly Recipe Ingredients:
  • 5 cups peeled pitted chopped Apricots
  • 1½ cups Water
  • 1/3 cup Fresh Lemon Juice
  • 6 cups Sugar
  • 2 (3 ounce) envelopes Liquid Pectin

Apricot Jam Jelly Recipe Instructions:
  • Mix apricots and water together then place over medium heat and bring to a boil. Lower heat and allow to gently simmer for 5 minutes. Remove from heat, skim then allow to set for 30 minutes.
  • Sieve the apricots and strain juice from pulp (use pulp in apricot jam).
  • Use 4 layers of clean damp cheese cloth to line the sieve.
  • Strain, cover the juice and place overnight in a refrigerator.
  • Ladle the juice from container, taking care not to disturb the sediment from bottom using 3 cups of juice.
  • Combine juices when warm and add sugar to make the jelly. Stir constantly until the sugar has dissolved, bring to a rolling boil.
  • Pour in pectin and bring to a rolling boil then stir constantly for 1 minute.
  • Remove from heat and skim off foam.
    Ladle into hot jars, leaving 1/4 inch space from the top.
  • Water bath for 15 minutes.
