Banana Cookie Recipe Ingredients:- 3/4 cup Butter - softened
- 1 cup firmly packed Light Brown Sugar
- 3/4 cup mashed Ripe Bananas
- 1 Egg
- 1 teaspoon Vanilla Extract
- 1/2 teaspoons Yellow Food Coloring
- 2½ cups Oats - quick or old fashioned
- 1½ cup All-Purpose Flour
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt

Banana Cookie Recipe Instructions:- Preheat oven to 350 degrees.
- Beat together the butter and sugar until creamy then add the bananas, eggs, vanilla extract and food coloring and continue to beat well.
- Mix together the oats, flour, baking soda and salt then add to the banana mixture and mix well.
- Scrape the dough into 1 gallon heavy-duty plastic food storage bag then seal the bag ensuring as much air as possible is squeezed out.
- In one corner of the bag, cut a 3/8-inch opening then squeeze the dough onto un-greased cookie sheets creating banana shapes. Leave 1½ inches of space between each banana shape. To create banana shapes squeeze a 4 inch curved line of dough onto the cookie sheet. Start 1/4 inch from the top of the first line then squeeze a second curved line of dough inside touching the first line of dough.
- Place in the oven and bake for 8 minutes or until the edges appear lightly browned.
- Allow to cool for 1 minute before transferring to a wire rack to cool completely.
- Store tightly covered or wrap airtight and freeze.
