Blackberry Cookie Recipe Instructions:- Preheat oven to 400 degrees F.
- Beat the butter in a large bowl using an electric mixer on medium to high speed for 30 seconds.
- Add the brown sugar and salt then continue to beat until combined, occasionally scraping the side of the bowl. Beat in the flour until the mixture is similar to coarse cornmeal. Beat in sour cream until mixture is moistened and it begins to cling.
- Form the mixture into a ball then divide into three equal portions.
- Roll out one of the dough portions into a 9-inch square on a lightly powered-sugared surface.
- Spread with 2 tablespoons of the jam then sprinkle with one-third of each of the coconut, walnuts, and currants. Roll up into a spiral then pinch edge to seal. Wrap in plastic wrap or waxed paper.
- Use the remaining dough, jam, coconut, walnuts and currants to repeat the process.
- Allow to chill for 2 to 3 hours or until firm enough to slice.
- Use parchment paper or non-stick foil to line a large cookie sheet then put to one side.
- Cut rolls into 1/2-inch-thick slices then place these slices 1 inch apart on a prepared cookie sheet.
- Place in the oven and bake for 12 minutes or until the tops appear lightly browned.
- Remove from oven and place cookies on a wire rack.
- While the cookies are warm, sprinkle them with powdered sugar then allow them to cool completely on the wire rack.
