Recipe for Homemade Blackberry Pie

• 3 cups Fresh Blackberries
• 2¼ cups All-Purpose Flour
• 1 teaspoon Salt
• 1/2 cup Vegetable Oil
• 3 tablespoons Cold Water
• 2/3 cup White Sugar
• 1/2 teaspoon Ground Cinnamon

• Preheat oven to 425 degrees F.
• Combine 2 cups flour and salt together in a medium mixing bowl. Create a well in the middle, pour in the oil and water then stir together.
• Create two balls from the dough, the first ball consisting of 3/4 of the dough and the second ball consisting of 1/4 of the dough.
• Place a sheet of wax paper over the larger ball of dough then roll it out, the dough may appear crumbly.
• Line an 8 inch pie pan with the dough.
• Roll out the small ball of dough then put to one side.
• Combine sugar, 1/4 cup flour and cinnamon in a small bowl.
• Place berries in a large bowl then sprinkle over with the sugar mixture, gently stirring to coat.
  Spread the filling into the dough lined pie pan and cover with top crust then pinch the crusts together.
• Cut slits in the top to allow steam to escape. Line the edges of the crust with tin foil to prevent burning.
• Place in the oven and bake for 30 to 45 minutes or until the crust appears lightly browned and filling is hot and bubbly.

• Allow to cool a little before serving.

• Serve with Cream, Ice Cream or Custard.
