Banana Blueberry Bread Ingredients:
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1 cup frozen blueberries
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup quick cooking oats
  • 1/2 cup nuts (optional)

Banana Blueberry Bread Instructions:
  • Preheat oven to 325°F degrees.
  • Grease and flour 2 loaf pans.
  • Cream together sugar and butter.
  • Beat in eggs. Add mashed bananas.
  • Measure flour, reserving 2 tablespoons of flour to coat blueberries.
  • Stir baking soda and salt into flour, mixing well. Stir in oats. Fold into banana mixture. Stir in vanilla.
  • Sprinkle the 2 tablespoons flour over blueberries, then fold into batter. Stir in nuts.
  • Transfer batter to loaf pans.
  • Bake about 50 minutes.
