Upside Down Pineapple Cake

Upside Down Pineapple Cake Ingredients:
  • 100g Butter - melted
  • 1/2 cup Brown Sugar - softly packed
  • 440g can pineapple rings - drained
  • 2 tablespoon of Pineapple juice from canned Pineapple rings

  • 125g Cream Cheese - softened
  • 150g Butter - softened
  • 1 cup Caster Sugar
  • Rind and juice of 1 Orange
  • 2 Eggs - lightly beaten
  • 1 cup Self-Raising Flour

Upside Down Pineapple Cake Instructions:
  • Tip the melted butter into a 24cm round cake tin, brushing butter up the sides to grease.
  • Sprinkle with brown sugar then arrange the pineapple rings in the base of the tin.
  • Mix the cream cheese, butter, and sugar with an electric mixer until light and fluffy.
  • Add the orange rind and juice, 2 tablespoons of pineapple juice, eggs and flour.
  • Mix well until smooth. then spoon mix into the prepared cake tin.
  • Bake in a preheated oven at 180ºC for 40-50 minutes or until a skewer comes out clean.
  • Leave to cool for 10 minutes.
  • Carefully turning out onto a wire rack and leave to cool thoroughly before slicing.
