Upside Down Pineapple Cake Ingredients:- 100g Butter - melted
- 1/2 cup Brown Sugar - softly packed
- 440g can pineapple rings - drained
- 2 tablespoon of Pineapple juice from canned Pineapple rings
- Cake
- 125g Cream Cheese - softened
- 150g Butter - softened
- 1 cup Caster Sugar
- Rind and juice of 1 Orange
- 2 Eggs - lightly beaten
- 1 cup Self-Raising Flour

Upside Down Pineapple Cake Instructions:- Tip the melted butter into a 24cm round cake tin, brushing butter up the sides to grease.
- Sprinkle with brown sugar then arrange the pineapple rings in the base of the tin.
- Mix the cream cheese, butter, and sugar with an electric mixer until light and fluffy.
- Add the orange rind and juice, 2 tablespoons of pineapple juice, eggs and flour.
- Mix well until smooth. then spoon mix into the prepared cake tin.
- Bake in a preheated oven at 180ºC for 40-50 minutes or until a skewer comes out clean.
- Leave to cool for 10 minutes.
- Carefully turning out onto a wire rack and leave to cool thoroughly before slicing.

- Store in a airtight cake tin.
