| Pineapple Cake Recipe | Pineapple Cake Recipe Ingredients:- 14oz can crushed Pineapple
- 6oz Butter
- 6oz Caster Sugar - superfine
- 3 Eggs
- 10oz Self Raising Flour
- 2 level teaspoons Baking Powder
- 1/4 level teaspoons Mixed Spice
- 2oz Ground Almonds

| Pineapple Cake Recipe Instructions:- Grease and line 7-inch square cake tin.
- Drain the of pineapple, reserving the juice.
Chop the fruit into pieces. Place approximately 7 pieces to one side to use as decoration. - In a mixing bowl, place the butter, sugar, eggs and 3 tablespoons of juice. Sift in the flour, mixed spice and baking powder into the mixing bowl with the juice mixture, then stir well.
- Add the chopped pineapple pieces and the ground almonds, then beat the mixture together well for a couple of minutes.
- Spoon the mixture into the cake tin. Decorate the edges using the 7 pieces of chopped Pineapple.
- Place in the middle of a preheated oven at 180 C for 1 hour 15 minutes - 1 hour 30 minutes or until golden brown in appearance and firm to the touch.
- Remove the cake tin from the oven, allow to stand for a couple of minutes before carefully turning onto a wire rack.
- Remove the greaseproof paper and allow to cool.
