Italian Cookie Instructions:- Heat oven to 325°F.
- Line 2 baking sheets with parchment paper.
- Mix flour, 1 1/2 teaspoons cinnamon, baking powder and salt in mixing bowl.
- Using an electric mixer, beat 1 cup of sugar and butter in large mixing bowl until very fluffy.
- Add 1 egg then beat well now add egg yolk and beat well.
- Mix in vanilla, then all dry ingredients.
- Transfer dough to hard surface and divide into two.
- Make each half into 9-inch-long and 1 1/2-inch-wide.
- Transfer shaped dough to a baking sheets then beat remaining egg in small bowl and brush Shaped dough with egg.
- Bake until golden and firm to touch about 50 minutes.
- Leave to cool on baking sheets when .
- Maintain oven temperature.
- Stir 3 tablespoons sugar and 1 teaspoon cinnamon in a bowl to combine.
- Using serrated knife, cut logs into 1/2-inch-wide slices.
- Place biscotti, cut side down, on baking sheets.
- Sprinkle 1/4 teaspoon cinnamon sugar over each biscotti.
- Bake until pale golden, about 20 minutes. Cool on racks.
