Italian Cookie Ingredients:
  • 2 cups All-Purpose Flour
  • 2 1/2 teaspoons Ground Cinnamon
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup and 3 tablespoons Sugar
  • 6 tablespoons unsalted Butter - room temperature
  • 2 large Eggs
  • 1 large Egg yolk
  • 1 teaspoon Vanilla Extract

Italian Cookie Instructions:
  • Heat oven to 325°F.
  • Line 2 baking sheets with parchment paper.
  • Mix flour, 1 1/2 teaspoons cinnamon, baking powder and salt in mixing bowl.
  • Using an electric mixer, beat 1 cup of sugar and butter in large mixing bowl until very fluffy.
  • Add 1 egg then beat well now add egg yolk and beat well.
  • Mix in vanilla, then all dry ingredients.
  • Transfer dough to hard surface and divide into two.
  •  Make each half into 9-inch-long and 1 1/2-inch-wide.
  • Transfer shaped dough to a baking sheets then beat remaining egg in small bowl and brush Shaped dough with egg.
  • Bake until golden and firm to touch about 50 minutes.
  • Leave to cool on baking sheets when .
  • Maintain oven temperature.
  • Stir 3 tablespoons sugar and 1 teaspoon cinnamon in a bowl to combine.
  • Using serrated knife, cut logs into 1/2-inch-wide slices.
  • Place biscotti, cut side down, on baking sheets.
  •  Sprinkle 1/4 teaspoon cinnamon sugar over each biscotti.
  • Bake until pale golden, about 20 minutes. Cool on racks.
Italian Cookie Cooking Time:
  • Cooking time is 1 hour.
  • Store in a cookie jar.
Italian Cookie Serving Instructions:
  • Serve with Tea or Coffee.
